That wouldn’t work. The mentos have to be placed in the bottle for the reaction. If the coke’s already been poured nothing will happen….

Nah, I think it would work, but the problem would be getting the ice cubes to finish freezing before the water itself reacts with the mentos. Otherwise you just look dumb for freezing mentos.
